Creamy Smoked Gouda Sauce

- 3T butter shopping list
- 1 small onion, finely diced shopping list
- 1 clove garlic, minced shopping list
- 1T cornstarch shopping list
- 2 cups half and half(or sub whole milk, but may have to use a lil more cornstarch) shopping list
- 1/4 cup Dijon or dill mustard shopping list
- 1lb smoked Gouda, grated shopping list
- 1t dried dill weed shopping list
- 1t Hungarian paprika shopping list
- kosher or sea salt and fresh ground pepper shopping list
How to make it
- Melt butter in medium heavy sauce pan over medium low heat.
- Add onion and cook about 5 minutes, stirring often, until softened.
- Add garlic and cook about 1 minute more.
- Add cornstarch and stir into butter until all the starch is coated.
- Add cream slowly while stirring.
- Bring mixture just to a boil and boil 1 minute, then reduce heat to a low simmer and add cheese.
- Cook, stirring often, until cheese is melted.
- Add mustard, dill, paprika and salt and pepper and stir, again. Heat another minute or so, then cool slightly before serving.
