How to make it

  • In small bowl, whisk together mayo, tomato sauce, horseradish, fresh ground black pepper, salt and lemon or lime juice.
  • Add green onions and stir to combine. Set aside.
  • Drizzle asparagus with olive oil and sea salt and roast in 400 oven or pan sear on high heat for just a couple of minutes, until al dente. Mine were small, young tips, so they literally took about 30 seconds each side.
  • In larger bowl, toss together crawfish meat, eggs, celery and olives.
  • Add dressing(don't add it all at once, you might not need it all) to meat mixture and fold to combine. Add dressing as desired.
  • Place a few asparagus spears on the bottom of each roll, then top with the salad.
  • Add lettuce and tomato, as desired.

    Quick question, 1 lb asparagus then use it's tips or 1 lb of the tips them selves? This recipe sounds amazing.

  • 1lb cooked crawfish meat(sub crab or lobster if you can get it :)
  • 1lb asparagus, tips only

  • 2-3 stalks celery, diced
  • 1/2 cup sliced ripe olives
  • about 1 cup mayonnaise

  • soft dinner rolls, leaf lettuce and sliced tomatoes, to serve
