Crawfish Louis Sliders

- 1lb cooked crawfish meat(sub crab or lobster if you can get it :) shopping list
- 1lb asparagus, tips only shopping list
- olive oil shopping list
- 2 eggs, hard boiled and chopped shopping list
- 2-3 stalks celery, diced shopping list
- 1/2 cup sliced ripe olives shopping list
- about 1 cup mayonnaise shopping list
- about 1/3 cup spicy tomato sauce(I use the type on the Mexican aisle at the market) shopping list
- 2 green onions, chopped shopping list
- 1T horseradish shopping list
- dash of fresh lemon or lime juice shopping list
- kosher or sea salt and fresh ground pepper shopping list
- soft dinner rolls, leaf lettuce and sliced tomatoes, to serve shopping list
How to make it
- In small bowl, whisk together mayo, tomato sauce, horseradish, fresh ground black pepper, salt and lemon or lime juice.
- Add green onions and stir to combine. Set aside.
- Drizzle asparagus with olive oil and sea salt and roast in 400 oven or pan sear on high heat for just a couple of minutes, until al dente. Mine were small, young tips, so they literally took about 30 seconds each side.
- In larger bowl, toss together crawfish meat, eggs, celery and olives.
- Add dressing(don't add it all at once, you might not need it all) to meat mixture and fold to combine. Add dressing as desired.
- Place a few asparagus spears on the bottom of each roll, then top with the salad.
- Add lettuce and tomato, as desired.
