How to make it

  • Combine all ingredients in extra large zipper back or plastic bowl with lid.
  • Toss to coat chicken with all the marinade ingredients.
  • Marinate in fridge for at least 8 hours, or over night.
  • Remove chicken from marinade and let rest at room temperature about 30 minutes before grilling.
  • Heat the marinade in small sauce pan over medium heat.
  • Bring to a low boil and let reduce while chicken is coming to room temp.
  • Grill chicken over high heat for about 4 minutes, each side(internal temp of about 165), basting with the reduced marinade.

    Ive never tried using pomegranate for cooking . This sounds great. And I just picked up coriander to add to my spice collection too : ) Thanks for sharing

    I finally got around to making this! Keni, it was absolutely fantastic!! Again, I am NOT a huge fan of chicken but this was so juicy and flavorful. The family loved it and so did my co-worker :) Wonderful job AGAIN! Thanks for sharing so many wonderful recipes.

    WOOHOO Keni! I am so pumped to try this!! I am NOT a huge fan of chicken unless it is made a bit funky. I will follow up after making this. Going to the grocer tomorrow :)

  • 3lbs boneless, skinless chicken thighs or breasts(I use thighs)
  • 16oz pure Pomegranate juice
  • 12oz Spicy Tomato juice(ie V8)
  • 1T ground coriander
  • 1T ground cumin
  • juice from 1 lemon
  • 1T dry spice blend containing some or all of the following: Oregano, sage, dill, thyme, marjoram,...I use Mediterranean Blend from myspicesage.com :)
  • 1/2-1t red pepper flakes
  • 4 cloves garlic, minced
  • 2T grated or dried minced onion
  • kosher or sea salt and plenty of fresh ground pepper
