Artichokes au vin blanc

- 4 fresh artichokes, (check for pale stem ends, dark brown indicates long storage and old artichokes) shopping list
- 2 tablepoons of olive oil, best you can afford shopping list
- 1 large clove of garlic shopping list
- 1 small onion shopping list
- 2 pinches of savory shopping list
- 2 teaspoons of salt shopping list
- 1 cup of good white wine shopping list
- Dipping Sauce: shopping list
- 1/4 cup of sour cream shopping list
- 1/4 cup of mayonnaise shopping list
- 1/2 of lemon juiced shopping list
- 1 tablespoon of Dijon mustard shopping list
- dash of worchestershire sauce shopping list
- a few grinds of fresh ground black pepper shopping list
- a smidgeon of grated raw onion, really only a tsp or so shopping list
How to make it
- Trim tops and peel stems from the artichokes.
- Put in pressure cooker.
- Sprinkle onion, olive oil, garlic, savory, salt and white wine over artichokes.
- Cook in pressure cooker for 10 minutes.
- Drizzle juices over the artichokes and serve.
- Mix sauce ingredients and serve on the side for dipping if desired.

- Alternative dipping sauces:
- Hot butter with a squeeze of anchovy paste and lemon juice!
- Hot hollandaise sauce
- Creamy horseradish sauce
- Sherry vinaigrette with crumbled egg yolks over top.
