Cod With Vegetable Pockets

- 2-4 slices of cod (or any other hardy whitefish) shopping list
- 10 grape tomatoes (slice long wise 3 slices per tomatoe) shopping list
- 1 zucchini (sliced thin diagonally) shopping list
- 2 carrots (sliced thin diagonally) shopping list
- 1/2 onion sliced thin shopping list
- 1/2 red pepper, julienned shopping list
- 2 garic cloves minced shopping list
- 2 tbsp white wine shopping list
- 3 thsp low sodium chicken broth shopping list
- salt & pepper to taste shopping list
- 1 tbsp thyme shopping list
- 1 tsp dill weed shopping list
- 1 tsp herb de provence shopping list
- baby spinach slices shopping list
- low fat butter shopping list
How to make it
- Preheat oven to 400
- Pull off parchment paper (one piece per fillet) (at least 16 inches)
- In bowl, place: tomatoes, carrots, zucchini, onion, red pepper, garlic, white wine, broth and seasonings-mix well
- Spray parchment paper (to avoid sticking)
- Place veggie mixture evenly over parchment papers
- Place fish fillet on top of each
- Top with spinach leaves (use as much as you like)
- Tab each fish with 1 tsp butter
- Fold edges over and overlap to seal well
- Bake 400 for 20-30 minutes or till cooked
- Open pockets carefully as not to get hurt with steam.
