How to make it

  • Preheat oven to 400
  • Pull off parchment paper (one piece per fillet) (at least 16 inches)
  • In bowl, place: tomatoes, carrots, zucchini, onion, red pepper, garlic, white wine, broth and seasonings-mix well
  • Spray parchment paper (to avoid sticking)
  • Place veggie mixture evenly over parchment papers
  • Place fish fillet on top of each
  • Top with spinach leaves (use as much as you like)
  • Tab each fish with 1 tsp butter
  • Fold edges over and overlap to seal well
  • Bake 400 for 20-30 minutes or till cooked
  • Open pockets carefully as not to get hurt with steam.

    Forget the salt for more health, and wtf is low fat butter??? Otherwise,. I like the sound of this! Thanks for the idea...
