How to make it

  • Preheat oven to 200¤c
  • Peel and wash the sweet potatoes
  • Chop the potatoes into wedges
  • Finely chop the onion and garlic
  • Put 4 tbsp of olive oil into a bowl
  • Put the wedges into the bowl and coat with the oil
  • Add the cumin, oregano and corriander and coat wedges
  • Add the onion and garlic and stir in
  • In a baking dish put 3 tbsp of olive oil
  • Add the wedges
  • Sprinkle the cheese on top
  • Cover with tin foil
  • Bake for 40 minutes
  • Remove tin foil and bake for a further 15 minutes
