This simple dish makes a creamy sauce with parmesan and artichokes. What's not to love? Would also be good on a white fish like tilapia--may need to adjust baking time.

- 4 boneless, skinless chicken breasts or 1 package thighs
- 1 can artichoke hears, chopped
- 3/4 c mayo
- 3/4 c grated parmesan
- 1 garlic clove, minced
- dash pepper
- 1-2 squirts lemon juice

Ingredients

4 boneless, skinless chicken breasts or 1 package thighs shopping list
1 can artichoke hears, chopped shopping list
3/4 c mayo shopping list
3/4 c grated parmesan shopping list
1 garlic clove, minced shopping list
dash pepper shopping list
1-2 squirts lemon juice shopping list

How to make it

1) Preheat oven to 375F.
2) Mix artichokes, parmesan, mayo, and spices.
3) Place chicken in greased baking dish, cover evenly with artichoke mixture.
4) Bake, uncovered, 30 min (check for doneness with meat thermometer). Broil a few extra minutes for color
