Jambalaya

- 4-6 bacon strips (diced but not too fine) shopping list
- 1 large onion ( diced in cubes) shopping list
- 2 garlic cloves (crushed finely) shopping list
- 4 med. size tomatoes (peeled and chopped) shopping list
- 1/2 tsp. fennel seeds (optional) shopping list
- 1/2 tsp. thyme shopping list
- 1 c. cooked rice shopping list
- 1 c. chicken stock ( heated) shopping list
- 1/4 lb. cooked ham (cubed in about 1.2 cm. thick) shopping list
- 1 c. fresh or frozen shelled shrimps shopping list
- 1 yellow pepper (cut in strips) shopping list
- 1 green pepper (cut in strips) shopping list
- few drops of hot pepper sauce shopping list
- salt and pepper shopping list
How to make it
- Cook bacon in a large cast iron pan over med. heat.
- When bacon is cooked, remove bacon by using slotted spoon and set aside.
- Add garlic and onion to hot pan, stir occassionally until cook in bacon fat.
- Stir in tomatoes, fennel and thyme. Simmer for 5 minutes.
- Add in rice and stock, ham, and bacon, stir well.
- Cover and cook for 15 minutes.
- Add peppers and shrimps, hot sauce and desired amount of salt and black pepper.
- Cover and continue cooking for about 5 minutes.
