- Dough: shopping list
- 1/2 package active dry or fresh yeast (1 1/4 teaspoons) shopping list
- 1/2 teaspoon honey shopping list
- 1/2 cup warm water, 105 to 115 degrees F shopping list
- 1 1/2 cups all-purpose flour shopping list
- 1/2 teaspoon kosher salt shopping list
- 1/2 tablespoon olive oil shopping list
- Filling: shopping list
- 1/2 lb. Italian sausage (raw) shopping list
- 1/2 cup onion, chopped shopping list
- 1/4 cup green pepper, chopped shopping list
- 3 large white mushrooms, sliced shopping list
- 1 clove garlic, minced shopping list
- a few tablespoons double concentrated tomato paste shopping list
- pizza spice mix, to taste (my fav is Penzey's) shopping list
- 1 small can california black olives, sliced shopping list
- 1 8-oz. block mozzarella cheese, shredded shopping list
- Garlic Butter: shopping list
- 1/2 a stick of unsalted butter shopping list
- 1 large clove garlic, crushed shopping list
- parmigiano-reggiano cheese, grated (for sprinkling on calzones) shopping list
How to make it
- For Dough:
- you can make the pizza dough in your bread machine on the dough setting OR:
- In a small bowl, dissolve the yeast and honey in a little of the warm water.
- In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
- Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
- For Filling:
- Cook sausage in a medium skillet until browned, breaking up the chunks with a wooden spoon See Photo. Add onion, garlic, mushrooms and bell pepper. Cook for about 5 minutes, or until the vegetables soften. Stir in tomato paste (with a little water to loosen it) pizza spice and cook for a few minutes. Lastly stir in the sliced olives. See Photo
- Preheat oven to 400 degrees.
- For Garlic Butter: Melt butter in small saucepan with garlic. keep on low heat, allowing the garlic to infuse the butter.
- Assembly:
- Divide dough into 2 balls and roll out each one into a circle (about 8 inches). Place cheese & filling on one side then carefully lift the far edge of the pizza dough and pull it over the top toward you - you basically need to fold it in half . Crimp the edges so none of the filling can spill out See Photo. Place the calzone side by side on a parchment lined baking sheet.
- Cut a couple small slits in top of each calzone to vent (which I forgot to do so a little cheese oozed out!)
- Bake for 15-20 minutes or until the dough is puffed up and golden on top and the filling is hot. Take out of oven and slather with garlic butter and sprinkle with parmesan cheese.
