Curried Lentils

- 1 cup brown or green lentils. shopping list
- 4 cups + 1 TBS vegetable stock shopping list
- 1 medium onion, chopped shopping list
- 3 medium cloves garlic, chopped shopping list
- 2 medium carrots, diced into 1/4 inch pieces shopping list
- 2 medium celery stalks,diced into 1/4 inch pieces shopping list
- 2 cups finely chopped kale shopping list
- 2 tsp curry powder shopping list
- 1 15oz can diced tomatoes (do not drain) shopping list
- 3 TBS chopped fresh coriander (cilantro) shopping list
- Pinch chilli powder (optional) shopping list
- salt and black pepper to taste shopping list
How to make it
- Rinse the lentils.
- Heat 1 tbs stock in medium pot.
- Sauté onion in the vegetable stock over medium heat for 5 minutes stirring frequently, until translucent.
- Add garlic, carrots, celery, and kale. Continue to sauté for another couple of minutes. Add curry/chilli powder and mix to bring out its flavor.
- Add the lentils, stock and tomatoes. Bring to the boil, reduce heat to medium low, and simmer uncovered until lentils and vegetables are tender, about 30 minutes. Add coriander, then salt and pepper to taste.
