Spotted Dick

- Serves 4
A boiled or steamed suet pudding, the earliest recipe for this pudding dates back to 1847 here in england,
Ingredients
- 4oz self raisin flour shopping list
- a pinch of salt shopping list
- 3oz shredded suet shopping list
- 3oz fresh breadcrumbs shopping list
- 2oz caster sugar shopping list
- 6oz currents shopping list
- grated rind of one lemon shopping list
- 5 tbsp of milk shopping list
How to make it
- Place all the dry ingredients in a mixing bowl and mix thoroughly
- make a well in the mixture then gradually add the milk to form a soft dough
- knead lightly until smooth
- put onto a floured surface and roll out into an oblong about 7" x 11"
- bring a large pan of water to the boil
- make a pleat in a large sheet of greaseproof paper or a clean teatowel, to allow for expansion,wrap the pudding loosely,tying each end with string, ( like a xmas cracker)
- steam or boil for two hours
- serve with hot custard

For anyone who doesn't know what caster sugar is. It's just the very fine grain white sugar. Called Fine Sugar or Berry sugar
