Cous Cous and Lentil Salad

I thought I would share a salad I made the other day. A simple cous cous and lentil salad  To make - cook the cous cous and let it cool, add tomatoes, cucumber, fresh herbs, I added chives, basil, and parsley from the garden, and some Italian mix with chipotle pepper and olive oil, and a little salt. I then mixed in some cooked brown lentils. Many stores sell these in little pouches now. This salad is colorful, flavorful, high in antioxidants, fiber, carbohydrates for energy, and protein. In other news, our daughter starts college this year. She will be going to UNC-Chapel Hill. We are very proud of her! Can you believe I started this blog when she was a baby! Our son starts High school and keeps us on our toes.  I continue to run my Nutrition practice- Anchored Nutrition Therapy , I have an office downtown Winston Salem, and see folks online with Berry Street .
