NOTE: This is a recipe I found on Rachel Ray’s website, dated 2011. Seems pretty basic, with limited ingredients. I decided to make a few additions, and let me tell you…it came out phenomenal!!!
Below is the Rachel’s basic recipe, and below that are my notes along with my additions.
Ingredients
• 2 cups tomato sauce• 1 small eggplant, cut into long slabs
• 2 small zucchini, cut into long slabs
• 1 cup each shredded fontina and parmesan
• 1/3 cup torn basil
Directions
Spread 1/2 cup sauce in 9-by-13-inch baking dish; top with eggplant, zucchini, 3/4 cup sauce and half of each cheese and basil; repeat. Bake for 25 minutes at 400 degrees.My version © 07/18/2014
Ingredients
• 1 can of Hunts 4 Cheese Pasta Sauce (or pasta sauce of choice(• 4 small baby eggplant, cut into long slabs
• 4 small zucchini, cut into long slabs
• 1 2lb bag of shredded parmesan
• 1 2lb bag of shredded mozarella
• 1/3 cup torn basil
• Minced Garlic (use your judgment on amount, depends on how much you like!)
• Half of a diced yellow onion
• Sliced Fresh Mushrooms (use your judgment, depends on how much you like!)
• Small can of sliced black olives (use your judgment, depends on how much you like!)
• 1 can of drained Fire Roasted Diced Tomatoes
• Grated Parmesan (use your judgment, depends on how much you like!)
• Salt and pepper as needed
Directions
Spread 1/2 cup sauce in 9-by-13-inch baking dish; top with eggplant, zucchini, garlic, onion, mushrooms, olives, diced tomatoes, sauce, grated parmesan, half of each cheese and basil; repeat. Bake for 25 minutes at 400 degrees or until top layer of cheese is melted, but hasn’t turned brown and hard.Serving Suggestion
As a suggestion when serving, which I found was really yummy, once I placed a serving in a dish, I added more grated parmesan. When I served left overs,(after heating it) instead of adding the grated parmesan, I added a slice of pepper jack cheese which turned out phenomenal!Next time I make it, I will see about adding French’s Fried Onions to it and see how that turns out. Isn't mine so much more colorful?? LOL Enjoy!!!
