Homemade Ginger Candy 自制姜糖

My SIL's friend shared this recipe with her. A good homemade ginger candy use good Bentong ginger to make. Always nice to have warm or hot ginger drink especially when we are travelling in the cool weather's countries. What you need to do is just drop a cube inside the hot water, it will melt in hot water then you could enjoyed and warm your body quickly.

Homemade Yellow Glutinous Rice Wine 自制黄酒

I supposed many Chinese women know about Huang Jiu 黄酒 ,because we consume this wine during confinement time. During confinement time, our mother or grandmother will use this wine to cook with kampung chicken with a lot of Bentong ginger (to get rid of angin (wind) . Also add Mee Sua (rice flour vermicilli) with the chicken rice wine . Anyway i never feel this chicken rice wine tasted nice during confinement time, hahaha. Instead  it taste good during normal time.
I was thinking to learn from my mother of making this rice wine long time ago, finally i mange to record the recipe this time as this is a keeper for my future reference ( when my daughter or daughter-in-law deliver baby), hehehe..also some of you might want to learn.

Homemade Prawn Crackers 自制虾饼~喜气羊羊 2015

When I was young, always seeing my mother made prawn crackers during CNY. My mother has been stopped making prawn crackers since last few years as she just bought from my auntie who selling prawn crackers. But after seeing my niece making her own prawn crackers, inspired me to make some. My first attempted was a success one, the taste just nice and full of prawn aroma.

Homemade red bean paste 自制红豆蓉馅料


Just like to record how to make red bean paste here. Normally i just make quick and easy version. Cook a pot of red bean soup, enjoy the soup and use the cooked red bean cook into red bean paste (add some sugar). This way you will have skin with the paste, sometime it taste a hint of bitterness from the skin. So this time i tried to make another method by removing the skin, and it taste really good. Furthermore, we can control the oil and sweetness when we homemade our red bean paste.

I have heard about  DDL Dulce de leche ( you can learn more from here) long time ago but I can't try as it was not easy to obtain full cream condensed milk last time. Anyway, after I received the F&N full cream sweetened condensed milk , i immediately try to make DDL at home.

Puff Pastry with Homemade Blueberries jam 蓝莓果醬酥


I bought a pack of puff pastry few months back, but now I totally forgot what actually I was planning to make at that time. Before the pastry getting expired, I have to quickly use it. First I tried this puff pastry with homemade blueberries jam. And today I use it to make pork and fennel puff rolls (picture posted in my Instagram account).

How to deep fry Fish Maw 怎样油炸鱼鳔

Fish Maw 花膠/鱼鳔  is commonly used in Chinese cooking especially served during Chinese New Year as Chinese people consider fish maw to be a luxury item. It is an excellent source of collagen. Fish maw itself has no taste, it takes on the flavour of the surrounding ingredients. You can find ready to use fish maw which already deep fried at the market, but my mother like to purchase the dried fish maw from the fisherman and deep fry by herself ( so we know it is clean and safe) . So I try to learn from her and share it here.

To make whipped cream from non-dairy whipping cream 植物性奶油


This is how i made the whipped cream using non-dairy whipping cream 植物性奶油. Whipped cream made from non-dairy whipping cream is suitable to make frosting for Birthday cake using sponge cake base (light and spongy cake) and that need to store inside the fridge. This cream will not turn hard after storing inside the fridge unlike buttercream.
