	un trozo de jamón&amp;nbsp; con o sin hueso&lt;/li&gt;&lt;li&gt;2 huesos de espinazo de cerdo&lt;/li&gt;&lt;li&gt;&amp;nbsp;1 butifarra cruda tipo de las de Toulouse&lt;/li&gt;&lt;li&gt;&amp;nbsp;ELABORACION &lt;br /&gt;&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;&amp;nbsp;En una olla&amp;nbsp; se hace hervir 3 
litros de agua  con el jamón y los huesos de espinazo&amp;nbsp; durante 1 hora y media, añadiendo las 
legumbres y verduras en este orden: Judias blancas, puerros y 
zanahorias, patatas cortadas en dados.

	Cuando la patata está medio cocida hay que añadir al cocido la col cortada muy fina.

	Cocer todo durante una hora a fuego lento.

	Hervir  durante 5 minutos a fuego vivo para que la grasa se incorpore a la Garbure.

	Rectificar de sal y pimienta.

Limpiar las sepias ,abrir los mejillones al vapor y quitar las conchas, a las cigalas quitar los bigotes largos.&lt;/h2&gt;

En una paella poner el aceite freír las cigalas, muy poco, vuelta y vuelta sacar y reservar, freír los ajos y sacarlos, freír la cebolla,el pimiento, las sepias un chorrin de Brandy, los tomates. Agregar el arroz, el agua o caldo 2 tazas por cada una de arroz. Sal pimentar a gusto.&amp;nbsp; Hervir 15 minutos, primero a fuego vivo y despues&amp;nbsp; mas moderado , 2 o 3 minutos antes de acabar la cocción añadir las cigalas y los mejillones.&amp;nbsp;&lt;/h2&gt;

   4 tomates, 2 cebolla, 1 1/4 kg de patatas, 400 g de bacalao seco, 200
 g de aceitunas , 2 pimientos rojos, 2 dl de aceite, sal.&lt;br /&gt;Preparación:&lt;br /&gt;   Cocer las patatas con piel, en abundante agua y sal. Cuando estén cocidas, dejar enfriar y cortar en rodajas.&lt;br /&gt;
   Desalar el bacalao, desmigándolo primero, y lavarlo en agua fría; 
dejarlo unas 2 horas en remojo y finalmente escurrirlo bien con las 
manos.&lt;br /&gt;   Cortar los tomates a trozos regulares, las cebollas a láminas, los pimientos a tiras.&lt;br /&gt;
   Presentar en una fuente honda, puesto a capas, primero las patatas, 
luego el bacalao, los tomates, y encima de todo las cebollas y las
