The Best Melt in the Mouth Pineapple Tarts (enclosed version)

50g 奶酪 cream cheese
75g 砂糖 caster sugar(我放60g)
170g 动物性奶油(我放whipping cream)
3粒 蛋黄 egg yolks
400g 低筋面粉 cake flour(我放430g)
30g 粟粉 corn starch
多放 30g 奶粉 milk powder
蛋黄 1个 涂面
(黄梨馅5g,饼皮6g可做约145-150粒)
牛油,糖和奶酪打均匀。
倒入动物性奶油,用手提式电动搅拌器以2号速度打10分钟,不时用刮刀把旁边的奶油刮下打均,直到它成为奶油膏状。
加入蛋黄打约1分钟。
面粉和粟粉分两次筛入奶油糊里,低速把它搅拌均匀。
让面糊休息至少10分钟,然后将馅料包入酥皮内,包成圆球状,外层涂上蛋液。
预热烤箱160度c,烤18-20分钟。

Cream butter, sugar and cream cheese together.
倒入动物性奶油,用手提式电动搅拌器以2号速度打10分钟,不时用刮刀把旁边的奶油刮下打均,直到它成为奶油膏状。
When it comes together, pour in cream and whip on medium speed (I used speed 2 on my hand mixer) for 10 minutes. Scrape the sides from time to time. It may look lumpy, don’t worry, later it’ll turn all creamy.

Beat in egg yolks for 1 minute.
面粉和粟粉分两次筛入奶油糊里,低速把它搅拌均匀。
Sift both flours and pour half of it into buttery mixture. Mix on low speed until it comes together and pour in the remaining flour and beat until it comes together. Do not over mix.
让面糊休息至少10分钟,然后将馅料包入酥皮内,包成圆球状,外层涂上蛋液。

预热烤箱160度c,烤18-20分钟。
