BORAGE

Borage (Borago officinalis), also known as a starflower, is an annual herb. It is native to the Mediterranean region and has naturalised in many other locales. It grows satisfactorily in gardens in the UK climate, remaining in the garden from year to year by self-seeding. The leaves are edible and have a cucumber-like flavour. The plant is grown in kitchen-gardens for that purpose in some parts of Europe. The plant is also commercially cultivated for borage seed oil extracted from its seeds.

Borage is used in companion planting. It is said to protect or nurse legumes, spinach, brassicas, and even strawberries. It is also said to be a good companion plant to tomatoes because it confuses the search image of the mother moths of tomato hornworms or manduca looking for a place to lay their eggs.

Traditionally Borago officinalis is used in various disorders, such as gastrointestinal (colic, cramps, diarrhoea), airways (asthma, bronchitis), cardiovascular, (cardiotonic, antihypertensive and blood purifier), urinary (diuretic and kidney/bladder disorders). In Iran people make a tea for relieve colds, flu, bronchitis, rheumatoid arthritis, and kidney inflammation. It is said to be warm in nature and alleviates symptoms that are caused by using food that is cold in nature such as cucumber and fish. People with heart problems can benefit using the borage tea, since it promotes reaching more oxygen to the heart, that’s why one should use this herb in moderate amounts.

CHERVIL

Chervil (Anthriscus cerefolium), sometimes called garden chervil to distinguish it from similar plants also called chervil, or French parsley, is a delicate annual herb related to parsley. It is commonly used to season mild-flavoured dishes and is a constituent of the French herb mixture fines herbes.

A member of the Apiaceae family, chervil is native to the Caucasus but was spread by the Romans through most of Europe, where it is now naturalised. The plants grow to 40–70 cm, with tripinnate leaves that may be curly. The small white flowers form small umbels, 2.54–5 cm across. The fruit is about 1 cm long, oblong-ovoid with a slender, ridged beak.

Chervil is used, particularly in France, to season poultry, seafood, young spring vegetables (such as carrots), soups, and sauces. More delicate than parsley, it has a faint taste of liquorice or aniseed. Chervil is one of the four traditional French fines herbes, along with tarragon, chives, and parsley, which are essential to French cooking. Unlike the more pungent, robust herbs, thyme, rosemary, etc., which can take prolonged cooking, the fines herbes are added at the last minute, to salads, omelettes, and soups.

Chervil has had various uses in folk medicine. It was claimed to be useful as a digestive aid, for lowering high blood pressure, and, infused with vinegar, for curing hiccups. Besides its digestive properties, it is used as a mild stimulant. Chervil has also been implicated in “strimmer dermatitis”, or phytophotodermatitis, due to spray from weed trimmers and other forms of contact. Other plants in the family Apiaceae can have similar effects.

Transplanting chervil can be difficult, due to the long taproot. It prefers a cool and moist location; otherwise, it rapidly goes to seed (also known as bolting). It is usually grown as a cool-season crop, like lettuce, and should be planted in early spring and late fall or in a winter greenhouse. Regular harvesting of leaves also helps to prevent bolting. If plants bolt despite precautions, the plant can be periodically re-sown throughout the growing season, thus producing fresh plants as older plants bolt and go out of production. According to some, slugs are attracted to chervil and the plant is sometimes used to bait them.

In the language of flowers, chervil sprigs mean “sincerity; fine feelings”, while a flowerhead means “I appreciate your fine character”.

ROSEMARY

Rosmarinus officinalis, commonly known as rosemary, is a woody, perennial herb with fragrant, evergreen, needle-like leaves and white, pink, purple, or blue flowers, native to the Mediterranean region. It is a member of the mint family Lamiaceae, which includes many other herbs. The name "rosemary" derives from the Latin for "dew" (ros) and "sea" (marinus), or "dew of the sea". The plant is also sometimes called anthos, from the ancient Greek word ἄνθος, meaning "flower".

Rosemary has a fibrous root system. Rosemary is an aromatic evergreen shrub that has leaves similar to hemlock needles. The leaves are used as a flavouring in foods such as stuffings and roast lamb, pork, chicken and turkey. It is native to the Mediterranean and Asia, but is reasonably hardy in cool climates. It can withstand droughts, surviving a severe lack of water for lengthy periods.

Forms range from upright to trailing; the upright forms can reach 1.5 m tall, rarely 2 m. The leaves are evergreen, 2–4 cm long and 2–5 mm broad, green above, and white below, with dense, short, woolly hair. The plant flowers in spring and summer in temperate climates, but the plants can be in constant bloom in warm climates; flowers are white, pink, purple or deep blue. Rosemary also has a tendency to flower outside its normal flowering season; it has been known to flower as late as early December, and as early as mid-February.

Since it is attractive and drought-tolerant, rosemary is used as an ornamental plant in gardens and for xeriscape landscaping, especially in regions of Mediterranean climate. It is considered easy to grow and pest-resistant. Rosemary can grow quite large and retain attractiveness for many years, can be pruned into formal shapes and low hedges, and has been used for topiary. It is easily grown in pots. The groundcover cultivars spread widely, with a dense and durable texture.

Rosemary grows on friable loam soil with good drainage in an open, sunny position. It will not withstand waterlogging and some varieties are susceptible to frost. It grows best in neutral to alkaline conditions (pH 7–7.8) with average fertility. It can be propagated from an existing plant by clipping a shoot (from a soft new growth) 10–15 cm long, stripping a few leaves from the bottom, and planting it directly into soil.
