black bean and rice soup

Most mornings I wake up with some idea....an inkling at least of what we'll have for dinner. 
This day I had no idea.
I opened the fridge, the cupboard......nothing. 
I opened the freezer......spanish rice from a few weeks ago. 
What would I do with that?
The same thing I do with every other left over ingredient.....throw it in soup.
And so this soup was born....and it's kind of one of those things that really does work with whatever you may  have lying around. Left over chicken? Throw it in. Corn tortillas....yum!
Let this soup be your canvas.

Black Bean and Rice Soup

-1 small onion, diced
-3 garlic cloves, minced
-1 roasted red pepper, diced (since peppers aren't in season, I used a small handful of jarred roasted red peppers)
-1 can of diced tomatoes 
-4-5 cups chicken stock (or vegetable stock)
-2 cans of black beans, drained and rinsed
-2 cups cooked spanish rice (plain rice would be fine if you don't have leftover spanish rice, you might want to up your seasonings a bit. I love the organic wild rice blend that Costco sells)
-1/2 tsp chipotle flakes (1/4tsp if you don't like it spicy)
-1TBS chili powder
-1 tsp cumin
-1/4 tsp dried oregano
-salt to taste

Saute' onion in a bit of olive oil until translucent--about 5 minutes. 
Add garlic and chipotle flakes, and cook for about 2-3 minutes.
Add the rest of the ingredients.
Simmer for a few hours--the soup is officially "done" as soon as it's hot, but I like to let soup simmer for the afternoon so all the flavors can play together for a while. 

Top with cilantro, your favorite tortilla chips, and a squeeze of lime.

minestrone soup

I love soup. 
looooooove it. 
I could eat it every day....and sometimes wonder why we don't eat soup for breakfast?
we should. 

This is a favorite around here, it's very easy and I always have most of the veggies on hand. 
It's not your traditional minestrone....I don't put any pasta or cabbage in it, but we like it all the same.

Minestrone Soup
serves 6-8

1 small onion, diced 
3 celery stalks, diced
4 medium carrots, sliced into strips (I'm sure that's a professional cooking term)
3 garlic cloves, minced
1 cup of green beans, cut into bite sized pieces
1 medium squash or zucchini, sliced
2 medium potatoes, diced
1 can of cannelloni beans
2 cups of crushed tomatoes (or one can of diced/crushed tomatoes if we are in the depths of winter)
4-5 cups of vegetable or chicken stock 
1 cup butternut squash or pumpkin puree
2 tsp dried thyme
1 tsp dried oregano
1 tsp dried basil
2 bay leaves
s&p to taste

Sauté onion, celery, carrots in a bit of olive oil for 5 minutes. 
Something I have learned from watching hours of the Food Network is to salt your veggies when they start to "sweat" in the pan. Sounds gross, but do it. 
Add garlic and cook for about a minute more. 
Add potatoes, tomatoes, cannelloni beans and butternut squash/pumpkin puree. 
Mix together. 
Pour in stock, add your herbs, and bring to a low rolling boil. 
Reduce heat to low, place lid on and simmer for a few hours. 
I usually add the green beans and squash about an hour before we eat so they don't get too mushy. If you are in a hurry, you can add them with the rest of the veggies. This can be eaten as soon as all the veggies are tender, but it's better if you let is simmer all afternoon!

Remove bay leaves, top with shaved parmesan or romano, and serve with warm butternut squash bread

-thyme
-olive oil
-s&p

stick them under the broiler, and while they're getting nice and toasty, throw together a quick salad.

ps. I get a ton of questions asking if I am a vegetarian. nope. we just eat as many veggies in the summer as we can, when they are perfect and fresh and taste like heaven. We eat a bit less meat than normal, in order to afford the good, unmedicated stuff:)

friday love

First week of summer!!! And it was perfect!
-long hot days that stretch on and on and on
-getting lost in a good book
-the pool.......oh the pool!
-summer evening BBQs
-camping trips in the making
-eating the first peppers out of our garden
-oh.....and the fact that there is still light in the air at 9:00.....I LOVE it!

You know I love a quick and simple dinner.....and we LOVE breakfast burritos!

Breakfast Burritos
tortilla
+ guacamole (avocado+red onion+cilantro+lime+salt)
+ black "smashy" beans (black beans cooked with garlic, lime, and cumin, and then smashed)
+potatoes (diced and boiled, then cooked in a hot pan with a little o.o. and s&p)
+eggs (scrambled)
+pepper jack cheese
+ cilantro
fold. top with salsa. and enjoy!

again, with the whole "I love summer theme"
I go to bed at night and wake up so happy! There is just something magic about it....don't you think??
Like the "it's way past bedtime but we decided to have daddy spray us while we're still dressed" moments. I love them.
I love my out of control roses.


I have been unhealthily obsessing over this house. (from this months issue of BHG).
Really. I am in LOVE, and need to live there....how can we make that happen?

I am really loving the talented miss Susan's Striped Bow Bags.
This song is a few years old, but I am currently so in love with it. It played along my night run last weekend, and it's just so fun and happy to dance to.....as you will see below. on a side note, I hope to be like her some day.

friday love

I love summer.
LOOOOOOOVE it.
The only thing I don't like about it, is the end.

And while it isn't officlaly summer yet....it sure feels like it
(well ok....it's only like 50 right now...but we hit 90 this week!)

I love that we made our first pool trip this week!
I love that the farmers market starts tomorrow!!
I love the summer evening rainstorms we've been having.....best. smell. ever!!

I love a good summer sandwich. Just a few more weeks and I'll be eating my own home grown tomatoes too!

-juicy ripe tomatoes, sliced
-fresh mozarella, sliced

-a drizzle of good olive oil

mmm...
I love having fresh flowers in my house 24/7. These came from my lovely bride Ally, (how lucky am I that she sent the centerpieces home with me!) but my rose bushes are loaded and I can't wait until more and more flowers start to bloom!

friday love

It's Friday!! What a week!

We have been running around like crazy (uhh.... I JUST got unpacked from last weeks trip...whoops) but it's been a good one. There has been so much sunshine I don't even know what to do with myself!!
We have been working outside, splashing in the sprinkler, meeting new friends, playing with old friends, and just soaking it up. I see pool days in the very near future.

We love a quick, healthy, throw together dinner!!
Summer Pasta Salad
-your favorite pasta
-tomatoes
-kalamata olives
-spinach
-cucumbers
-artichoke hearts
-feta cheese
toss with olive oil, fresh lemon juice, fresh basil and oregano, and a little s&p!
enjoy!

I love that our garden survived through our freak end-of-May snowstorm! Things are GROWING!

Ok. Where to begin with this one.....I am in LOVE with ALL of Jenny's products over at LobotoME. She has everything you need to be more organized (which is exactly what I need to do). I've been using her Feed Me lists.....they are perfect! Your meal plan, and grocery list, cozied up together. I also really like the Fit Me notepad....especially right now as I'm getting ready for the big race--I figure out at the beginning of the week exactly what I need to do, and when it's written down I make SURE it happens (although, 3 workouts in 24 hours seems alot easier when it's just written down....yikes)

chile and lime veggie bowls

These are so so good!
We've had them a few times since I first found the recipe in my Better Homes and Gardens Magazine.
Chile and Lime Veggie Bowls
adapted from BHG

1 Tbsp. soy sauce
1 Tbsp. lime juice
1 tsp. chili powder
1 tsp. fresh oregano, snipped, or 1/2 tsp. dried oregano, crushed
1 tsp. olive oil
2 medium sweet potatos, peeled and cut in 1-inch cubes
1 15-oz. can black beans, rinsed and drained
1 cup cherry or grape tomatoes, halved
1 cup shelled edamame
1 medium avocado, halved, seeded, peeled, and chopped
large cabbage leaves
1/4 cup thinly sliced green onions
lime wedges (optional)

directions
1. Make Dressing; set aside (if you can make this the day before....DO!! It has so much more flavor!)

Yogurt-Lime Dressing
In small bowl combine 1/2 cup plain low-fat yogurt, 2 TBS lime juice, 1 TBS soy sauce, 1 TBS chili powder, and 1 clove minced garlic, 2 TBS chopped cilantro, 1TBS chopped chives. Whisk in 1/4 cup olive oil until well combined.

2. In small bowl stir together soy sauce, lime juice, chili powder, oregano, and olive oil; add diced sweet potatoes and toss to coat. Roast at 425° for 30-40 minutes until done.

3. Divide potatoes, beans, tomatoes, edamame, and avocado among cabbage leaves. Sprinkle with green onions.

Drizzle veggies with dressing, and enjoy!

(we found it easiest to fold them up and eat them like tacos:)

Tabouleh

mmm.....I am craving some Reef's Kitchen.

My friend Tara told me that she made Tabouleh last week.....and I haven't stopped thinking about it since!

Must. Make. Tabouleh.

So I did. I threw in a few extras....because as long as we're eating a veggie meal, we might as well eat LOTS of veggies, right?

First I had to buy the bulgur wheat.
I had noooo idea what I was looking for--or where to find it.

Ta-Da!! Bulk section at Whole Foods.

It looks like this. (check out that hand modeling!)
To prepare it, add one part bulgur, to 3 parts boiling water.
Let soak for 1-2 hours.

Tabouleh (with spinach and cucumbers)

1/2 c dry bulgur (prepare as shown above)
2 tomatoes, diced
1/4 c red onion, finely chopped
1/2 a cucumber, diced
1/2 c spinach, coarsely chopped
1/2 c parsley, finely chopped
1-2 TBS fresh mint*, finely chopped
(*I am not a mint lover, some recipes call for up to 1/2 c mint--so add to taste)
juice of 1 lemon
2-3 TBS olive oil
a good sized pinch of salt

Combine all ingredients, and let sit for 30 min-to an hour before eating.

We ate it for a quick dinner with flat bread and hummus.
I also think it would be perfect with salmon!

friday love

We love to try new things. I've been trying out new vegetarian meals lately, so we can spend our money on better (hormone & antibiotic free) meat. So here's the deal with this one.....we liked it....aLOT actually. The kids ate it up so fast, and meat loving Robby asked for more. The only problem....we were hungry an hour later.
So....all my vegetarian friends.....would would you add to go with this?
Sweet Potato and Black Bean Patties with avocado salad
2 large sweet potatoes, roasted and peeled
1 cup black beans
1 garlic clove, minced
2TBS red onion, chopped
1/4c cilantro, chopped
1TBS lime juice
1tsp lime zest
s&p

Add all ingredients EXCEPT BLACK BEANS into a food processor.
Process until well mixed.
STIR in black beans.
Refrigerate for 20 minutes.
Form into small patties, and cook in nonstick pan with a little olive oil.
4 minutes each side.
Salad
mixed greens + avacad0+olive oil+lime juice+ cliantro +s&p....mmmm

Reason #864 why I love old houses. Old fireplaces. And built in book shelves. I think I should convince Robby that we really really need some built in bookshelves....don't you think?
