How to Make Udon Carbonara in Under 20 Minutes (no cream)

Today I made a delicious Udon Carbonara, a twist on the classic Italian spaghetti carbonara. The sauce is based off the authentic Italian recipe, with udon added instead of pasta, and an optional addition of seaweed as a garnish twist. Hope you get to make this for yourself and enjoy 🙂

Ingredients:
25g grated pecorino
25g grated parmesan
1 egg
50g pancetta, diced
1 clove garlic, finely chopped
1 tbs chives, finely sliced
1/2 tbs fresh cracked black pepper
Some olive oil for frying
1 serve frozen Japanese udon noodles
150ml boiling water
Optional garnish: egg yolk, roasted seaweed cut into thin strips
Method:
1. Mix the egg, pepper and cheeses together in a bowl
2. Dice the pancetta (about 1cm x 0.5cm pieces)
3. Finely chop the garlic
4. Finely slice the chives
5. Put a pan on medium to low heat
6. Add a dash of olive oil and fry off the pancetta until the fat renders and the pancetta becomes crispy – about 2-3 minutes
7. Lower the heat and add the garlic, be careful not to burn it – take the pan off the heat immediately if it starts smoking – about 1 minute
8. Remove the pancetta and garlic and keep aside for now
9. Add 150 ml boiling water and turn the heat back up to medium
10. Add the frozen udon noodles – cook for about 1-2 minutes, turning and mixing until fullly cooked
11. Ensure about 1/2 of the water is evaporated and turn off the heat – the sauce will come together with the residual heat without scrambling the egg
12. Add back the pancetta and garlic and stir together
13. Add the cheese/egg mixture and stir until the sauce becomes creamy and thick
14. Add most of the chives (keep some aside as a garnish)
15. Serve in a deep dish, top with more fresh chives
Optional: garnish with an additional egg yolk and thin strips of roasted seaweed
