Well, I have been cooking again!

Well, I have been cooking again! I don't do much of it. I don't know why, because I do enjoy it. It was a rainy day today and I ended up making a wonderful crockpot of potato soup. Just the thing for a rainy day when spring is beginning to show it's lovely colors.
I noticed today that the dogwood trees are beginning to bud! They usually are blooming at Easter, but since Easter came early this year, everything still looked drab and wintry. The birds are everywhere! Today I saw redbirds everywhere, and a beautiful yellow finch, among others.

For our family get-together on Easter, I made the usual banana pudding that everyone asks for.

1/2 Cup Sugar,
3 TBS Flour,
dash salt,
4 Egg Yolks,
2 Cups Milk
5-6 Bananas
Nilla Vanilla Wafers
Mix sugar, flour and salt with egg yolks, adding a little milk till mixed well. Add rest of milk and cook at low heat till thickened slightly. Set aside and allow to cool. Add 1 teaspoon Vanilla Flavoring. Place a layer of Nilla Vanilla Wafers in bottom of bowl, make one layer of bananas, pour pudding mixture over bananas. Continue to layer wafers, bananas and pudding untill all is used. You may make meringue with the egg whites, add 1/4 cup sugar, and bake pudidng at 350 degrees until brown, or use Kool Whip for the topping. (I used Kool Whip because some people in my family like it better.) If you choose not to use the egg whites, freeze them in a zip lock bag and they can be used another time for another recipe.
