Spago By Wolfgang Puck @ Marina Bay Sands, Singapore

Spago's 57th-level terrace lounge showcases the contemporary cuisine of American celebrity chef Wolfgang Puck - the food is accomplished; start with the signature stand-out of spicy tuna tartare cones ($36), a triumph of taste & texture, featuring luscious big eye tuna laced with chilli aioli & scallions in crunchy sesame-miso cones, a vividly memorable prelude to the meal.

Irresistibly nuanced recipes, made with top-flight ingredients - tarts topped with ultra-creamy foie gras mousse tinged with espresso, coconut-pandan kaya jam, soy & fleur de sel ($25), divinely decadent toast with sea urchin, Maryland blue crab, confit tomato marmalade & herb aioli ($44) & super-succulent grilled pork belly with gochujang aioli, jicama & nashi pear kimchi ($28); our sole order that misfired was the flat-tasting chicken laksa spring rolls ($22). Don't skip the exquisite Asian-accented cocktails, crafted with the likes of lapsang souchong-infused single malt, Fuji apples & Thai basils ($26 & above).

Red Eye Smokehouse @ Singapore

Red Eye Smokehouse is one Singaporean eatery we'd love to see in KL: Serving American-inspired BBQ soul food for carnivores, this destination deserves to draw customers by the droves for its meat - the beef brisket is the star, achingly tender, satisfying with smoky nuances. The chicken wings come a very close second - first smoked, then deep-fried, & finally tossed in sriracha sauce - the tastiest wings we've had in ages, bursting with beautifully calibrated flavours. Come hungry & sample as much as feasible; the chopped pork, burnt-end beans & candied yams all merit your belly's thorough attention.


The best time to visit might be on weekends for lunch, when sandwiches are also available - the fried smoked chicken in a brioche with slaw & pickles is irresistible; we spotted a neighbouring table enjoying it, & the sight compelled us to order it too. Ideally partnered with craft beer & wine.

Kite @ Craig Road, Singapore

Kite is the kind of restaurant that makes eating out a pleasurable experience, conjuring small plates & cocktails that combine intelligent know-how with imaginative whimsy - sure, some of the dishes here fare better than others, but the sense of experimentation is exuberantly infectious throughout. The restaurant proves there's more than one way to skin a chicken or pig, serving memorable starters like dried chicken skin with bourbon glaze & juniper or crispy pork skin with togarashi spices & lime mayo ($6 each). It also wins our heart by offering sweetbread, presented as fried nuggets in a creamy curry sauce ($12).

Asian influences abound - somen is thoroughly infused with lap cheong oil, the unmistakably pungent, sweet-salty flavour & fragrance of Chinese sausages permeating every strand, topped with prawns for extra dynamics in taste & dimensions of texture ($12). For meat, there's quail with barley, mushrooms & spiced jus ($16), pleasant but overshadowed by the potently succulent medium-rare Spanish black pig complemented with chestnuts, walnuts, apple & plum ($18). Cocktails (averaging $20) are also a should-order, with striking components like pandan vodka, cocoa nori syrup, red dates syrup & walnut bitters.

Sacha & Sons @ Mandarin Gallery, Singapore

This New York-inspired deli at Singapore's Mandarin Gallery offers a bunch of stuff unseen in KL, specifically Jewish fare like latke (potato-&-onion pancakes traditionally part of the Hannukah festival, served here with creme fraiche & salmon roe) & matzo ball soup (with dumplings made with matzah meal, eggs & fat). Some recipes might be an acquired taste, missing the culinary firepower that Asian palates adore, but we'd return for the brilliant bagels with luscious chopped liver, a satisfying lunch pairing with prosecco & red wine. You'll also find numerous other NYC staples like pastrami knishes & grilled Reubens.
