Sugar Cookies in Minutes

My husband usually asks for cake or muffins.  Suddenly, he requests cookies and pies.  It will  be fun changing my style of cooking.  Today, I made simple sugar cookies.  I planned to make Pecan Sandies but had no pecans.   I have made different sugar cookie recipes and this one is the most simple.  It took no time to put the ingredients together, mix and make balls.  These spread more than the average cookie and resulted in almost perfect circles.   Hubby approved and I got of with a minimum of work. **** Warning - I think, my posts for a while, will ha ve information on our experience and the experiences of the many people, in my community and in others, that still do not have power.*****   I decided to bake some cookies for my class.  I had not done so for this group of boys and they were patiently waiting ---- maybe not so patiently.  I thought a cookie with jelly on top would be a big success for a starter.  (I certainly regretted this after we lost our power.  It gets worse, I made two other cookies.  All went into the garbage. ) I am sure, many of you have baked under pressure and sometimes, it can spur us on to be more efficient and productive.  This time, listening to the news and the predictions, was distracting and I kept questioning whether, I had added the sugar or doubled the eggs.   I might have done any of these things but if I did, I wish I knew since each batch tasted just right. Baking Gals

"Baking GALS (GALS stands for Give A Little Support) is a group of volunteer bakers from around the country who bake and ship homemade goodies to our heroic military men and women who are currently deployed in a war zone. Our goal is to show our support and send a little bit of home to remind them that we appreciate all that they do for our freedom." It is another month and I am baking once again through the group, Baking Gals.   This is not a big deal to do, but I can only  hope, it makes a difference to those receiving my cookies.  In selecting cookies, I look for quick, easy and delicious recipes.  QED means, I can bake more quickly and since I do this in a limited time frame, that is important.  The recipes, we send should be good to eat but those that are not going to melt if they end up in a hot area.  As a result, I leave out frosting or decorations.  I do include chips in the cookies as well as nuts and dried fruit, depending on th...
