Peach and Almond Galette

This week for Wednesdays With Donna Hay, Peggy chose Pear and Almond Galettes from the book, Off the Shelf, located on page 160.  This is not the season for pears so I used peaches. This is an easy recipe, using puff pastry for the galette crust.  I have made several Donna Hay recipes, making use of puff pastry and it is a pleasure to get through a recipe quickly and easily.    It made a nice dessert with the peachy flavor.  I am sure pear would work as well.  To find out......... c heck out our  page  and see what the other gals have done with this recipe.

Blueberry Chicken with Crispy Bread Crumbs

This week, Peggy has chosen  Blueberry Chicken with Crispy Bread Crumbs   found on page 155 in Weeknight Wonders.  Each recipe brings me closer to Ellie and her wonderful recipes. Blueberries don't make for a good photo compared to peaches and peaches and New York don't go together well, in the winter.  Most of us are waiting for the warm weather and the peaches .  We had a lovely warm day and it is back to below freezing. I made this a few weeks ago since this is a super busy time of the year with Passover coming in a few short weeks and so much to do in preparation.  I hate to say, I don't remember too much about it other than we liked the chicken, but this is the case.  I am not sure if the blueberries were a good substitution . Fresh Peach Cake - Ina Garten

We are having an extra amount of company, this Shabbos (Sabbath) which means I do additional baking.  I have Ina's book, How Easy is That?   I was sitting at the table with a cup of coffee and I landed on the page with this recipe. I just knew the coffee would be that much better with a piece of cake. This also is another dessert recipe to use for Ina Fridays.  Please do join us. Fresh Peach Cake   (adapted)  Barefoot Contessa How Easy Is That?  Ingredients: 1/2 cup oil 1½ cups sugar, divided 2  eggs, at room temperature 1 cup sour cream, at room temperature 1 teaspoon pure vanilla extract 2 cups gluten-free flour 1 teaspoon baking soda  zest from 1 orange and 1 lemon ( I left this out of the apple crisp and was not going to let it go to waste.) 1 teaspoon baking powder ½ teaspoon kosher salt 1 teaspoon ground cinnamon 3 large, ripe peaches, peeled, pitted, and sliced Method: Preheat the oven to 350 degrees. Peaches and Cream Muffins SRC

I have missed the Secret Recipe Club .  I love looking through other foodie's blogs and finding out how they approach cooking and eating.   The approach of Jen's Journey  is to make recipes that are doable.  You can get the ingredients easily and the recipes, in most cases, are easy to make and look delicious.  I had no problem finding something to make.  At this point, I am stressing baking so that hubby has snack food.  When I saw the scrumptious sounding muffins, I knew this would be the ones to make. We love muffins and I have made quite a variety over the years.  One year, I made a different muffin each week and we loved every moment, eating them and planning the next variation. I made mine with peaches which Pappas said to slice but I just divided them into two pieces each.  I was a little concerned because the peach had to be pushed down a bit further and I was afraid that it was going to push its way up.  Hurrah.  It was just fine.  I could not locate my two piece tart pan so I made this in a pie plate.  I had no problem getting it out, I am happy to say....

Peachy Sweet Potatoes - Ever so Easy

This is an easy recipe and can be thrown together almost 1-2-3.  It turned out to be delicious and I would suggest that when you need a side quickly and easily, you might want to select this one.  I added sugar to it but I don't think it is necessary .  That would make it a lot healthier. Peachy Sweet Potatoes Ingredients: 2 large sweet potatoes 1 can sliced peaches (16 ounces)  (includes juice) or 1 cup frozen peaches or 2 fresh peaches, sliced 1 tablespoon brown sugar 1 teaspoon pumpkin pie spice Method: Peel and chop sweet potatoes and place in medium saucepan of boiling water.  Boil till just soft about 20 minutes. Place cooked sweet potatoes in a small baking dish (1 quart). Add peaches and if using canned,  add 1/2 cup of the juice.  If using frozen or fresh peaches, use 1/2 cup apple or orange juice.  Mix sugar, pumpkin pie spice and juice and sprinkle over the peaches and sweet potatoes. Bake at 350 degrees F. for 20 minutes. Grocery Cart ...
