Sunshine Soup - Nigella Lawson

This winter has been a COLD one with lots of snow and ice.  That makes it the perfect weather for soup and more soup. The magic of soup is that almost any soup is delicious, or at least, we think so, in our home.  I have proven it by the number of soups that have been made in my kitchen in the past month and we honestly loved each one. I found this soup, aptly called Sunshine Soup in Nigella's book, "Nigella Kitchen."   I could leave this book out and read it, any time, I have a few minutes.  It is a wonderful way to learn about Nigella's life and her thinking about cooking.  There are so many tips punctuating not only her recipes but also her stories. The soup is rich in vegetable broth with corn, garlic and roasted peppers.  Roasted peppers are delight by themselves; put them into a soup and the rich flavor permeates every aspect of the soup. Cherry Tomato Couscous - Nigella Lawson

This month, we are focusing on Nigella Lawson in Cook Like A Star.  I am having a blast going through the book, Nigella Kitchen.  Once upon a time, I put yellow stickies on the recipes that most appealed to me and have only cooked a handful of these so this is my time, to catch up and make some others. I have been buying brown rice couscous since the celiac in the family prohibits us having "real" couscous.  I found this recipe and  decided it made an easy but filling dish.  I followed the directions from the box but used half vegetable broth and half water.  I think, I should have used all soup since it needed flavor.   Ingredients: 1 cup brown rice couscous 1 cup water 1 cup soup (it was too dry so I added another half of a cup of soup) 1 tablespoon grated fresh gingerroot 1 teaspoon lemon juice 1 teaspoon garlic, minced 1 pint cherry tomatoes, halved 1 tablespoon fresh parsley or oregano Put the couscous into a heatproof bowl and all t...

Nigella's Mac and Cheese

When, speaking with my husband, he mentioned that he would like to have a simple macaroni and cheese, for dinner.  I had been thinking soup since, we had not had any, this week.   I picked up Nigella Express to see if there was an easy recipe.  While soup has peeling and chopping, it is easy to make.  This mac and cheese had to be also simple to create.  When I looked at this recipe, I was surprised at how few ingredients it took as well as the small number of steps.  Mac and Cheese, here I come. This is very, very good mac and cheese.  I was not expecting it, looking at the recipe.  I thought it would be boring but it was not .  I did add 2 tablespoons of cream cheese to the recipe and I give some of the credit to that.  I also used a Mexican blend for the main cheeses. Crustless Pizza - Nigella

Crustless Pizza by Nigella I was excited when I came across this recipe.  When, I read what was in it and how it was made, I had doubts about it coming out, like pizza, and I was correct.  It did turn out to be a delicious dish and I would make it again with a few changes.  I would put the vegetables in the batter and possibly add just a bit of oil.  I would start with half a tablespoon. Considering this comes from Nigella's Kitchen, I knew it had potential.  I love this book.  I enjoy cooking from it but even more, I enjoy reading it, like an instructional novel.  Nigella has wonderful hints to adapt to our own cooking.  She also reveals her own cooking experiences and they make this book a little bit of autobiography. Bon Appetit is a wonderful and stunning blog.  Go take a look and see for yourself.  I found this amazing recipe there and knew it would be a hit, even though, I was missing some of the ingredients.  I was so right.  This is delicious and one tends to crave more after just tasting it.
