Pan Roasted Chicken Cutlets with Maple Mustard Sauce

I love to leave the chicken breasts plump and not flatten them for this particular recipe.  We end up getting this juicy and most chicken immersed in flavor.   Crusty Chicken  Cutlets with Maple­ Mustard Sauce  ( adapted from  Cooking Light ) Ingredients: 4  skinless, boneless chicken breast halves 1/4 teaspoon salt 1/4 teaspoon black pepper Cooking spray  2 tablespoons chopped red onion 6 tablespoons maple syrup 1/4 cup Dijon mustard 1 tablespoon water 1 teaspoon chopped fresh dill Breading: 2 cups gluten-free panko crumbs   Method: Preheat oven to 350 degrees. Sprinkle chicken evenly with salt and pepper. Heat a large nonstick skillet over medium ­high heat. Coat pan with cooking spray. Combine remaining ingredients. Maple Quinoa Muffins

   I was curious how these were going to come out and although they look slightly different they passed easily as good muffins.  How healthy can you get?  No butter!  No oil! No white sugar!  No white flour!  Maple Quinoa Muffins Ingredients: 2 1/2 cups quinoa, cooked and cooled 4 eggs, beaten 1/3 cup Rice milk 1/3 cup maple syrup 1 teaspoon vanilla extract 1 tablespoon cinnamon Method: Preheat the oven to 375ºF and place the quinoa in a large mixing bowl. Spray six muffin inserts in tin. In a small bowl, beat eggs together, Rice milk, vanilla extract, and cinnamon until combined. Add maple syrup. Add egg mixture to quinoa.  Pour into muffin tins. Cinnamon sugar-coated maple apple cakes

I would like to continue my train of thought from the last post about changes to this blog.  Besides adding a new dimension of life in school, I want to focus on my cooking and baking.  I asked myself  questions and the answers made my think, quite clear. To work in my schedule, I want to make quick and easy and delicious recipes.  That was the initial intent of this blog but at that time, I was labeling these recipes, as special.  They are not special.  They are what makes me a cook. I learned a long time ago that the difficulty of a recipe does not make its merit.  There are times two or three ingredients, mixed together, make magic.  Usually, they are not as beautiful or intricate as those that we put hours into.  I don't have those hours, not if I want to keep my life to open to family,  job and other interests. Sweet Potato Salad with Orange-Maple Dressing

Enjoy this one.  It is really good.  I am always looking for savory recipes for sweet potatoes and this has an element of the savory along with the sweet. Sweet Potato Salad with Orange Maple Dressing (adapted from Bon Appetit - 2003) Ingredients:  Dressing 1/4 cup extra-virgin olive oil 2 tablespoons pure maple syrup 2 tablespoons orange juice 2 tablespoons balsamic vinegar 1 tablespoon fresh lemon juice 2 teaspoons pumpkin pie spice Salad 4large sweet potatoes, peeled, cut into 3/4-inch cubes 1 cup chopped green onions ½ chopped red bell pepper 1 cup chopped fresh parsley 1 cup pecans, toasted, coarsely chopped 1 cup dried blueberries, cranberries and cherries Method: For dressing: Whisk all ingredients to blend in small bowl. Salmon - How Good Does it Get?

I know it sounds like overkill but it is not.  No, it is just plain good.  With all the juices, I added, the flavor is subtle.  How Good Does it Get Salmon? Ingredients:  Use about half of what you make for the salmon.  I like it so much that I wanted to have some, sitting in the refrigerator to use on meat or poultry. Apple Maple Rice

Fridays find me, in the kitchen, cooking for the Sabbath (Shabbat or Shabbos).  When, I awake, I am filled with excitement.  Each week, I try for a new menu and have fun creating it.  Many serve the same foods on Shabbos and it is delicious (i.e. Challah, gefilte fish, chicken soup with noodles, roast chicken, potato kugel, another side and salads and of course dessert.)  I love that combination and for eating, it is fine. On the other hand, for cooking, it gets boring to make, week after week so I try completely different recipes, each week.  One of the dishes to be served tonight is this Apple Maple Rice.  I admit, I couldn't wait and hubby and I both tasted this (generously).  It is going to be a favorite.  I have another recipe similar with apples and carrots but without the maple syrup and in my opinion, I think it is the maple syrup that gives this, its rich taste. Maple Pecan Muffins

I have mentioned before that I love muffins, all kinds of muffins and yet, I have not posted any, for a while.  I think it is a time for another muffin, one from Nigella Lawson.   I respect Nigella and love most of her recipes.  Reading her new book has given me glances of who she is and I have learned a tremendous amount from her tips and her techniques. There are chefs that I have cooked from that I wish I could do a recipe a week.  Nigella is one.  Tyler Florence is another. I am planning to do a lot more Ina Garten cooking, right here.  I am not a person who uses lots of fat.  I sub oil for butter whenever possible.  Ina is going to be my challenge because I am cutting down her fats in my recipes and I am going to make them work.  I recently made one of her loaf cakes and I did just this, subbed in oil for the butter and used less than called for.  I had a luscious, moist cake.  It was delicious and I doubt it lost any...

Maple Glazed Salmon  We rarely eat salmon, during the week, but last Thursday, we were yearning for it.  What is nice about salmon is that it can be made simply and still be filled with yumminess.  For this salmon, I mixed a few ingredients and stuck it in the oven to end up eating this light and flavorful dinner. Who said maple syrup is for pancakes and French Toast?  Not me. Maple Glazed Salmon Ingredients: 4 pieces of salmon  1/8 teaspoon of white pepper  (substitute black pepper, if you prefer) 2 tablespoons soy sauce 1/4 cup maple syrup 1/4 teaspoon garlic powder Directions: Preheat oven --- 400 degrees. Mix soy sauce and maple syrup in a small bowl.  Add the white pepper and garlic powder.  Mix together. Place the salmon in a baking dish.  If you want to use it as a marinade, let it stand in refrigerator for at least one half hour.  Pour out marinade and  bake for 20 minutes.
