Sunshine Yogurt Muffins - Clinton Street Baking Company

I have had the book, Clinton Street Baking Company Cookbook for about a year.  When I first got it, I cooked from it a few times and was happy with the results.  Unfortunately, I put it on the shelf and forgot about it.  I am enthusiastic about the book and it is now off that shelf and I have marked a number of recipes to make.   This is not a baking book despite the title.  The restaurant serves meals and the book contains many of their recipes.  This is the story of boy meets girl, boy and girl get married, man and woman buy restaurant and and make a success out of it.  This is the story of a unassuming place that seats 32 and has lines waiting outside and customers traveling from all over the world.  Why shouldn't we bake and cook their delightful dishes. I don't think that I am a citrus person but in truth when I use any citrus flavor I enjoy the food.  Therefore, at first, when I heard that it was Lemon and Lime, I was not excited.  Adding to this, I found this out on Monday and had to come up with something, all in the middle of report cards, company, babysitting for my precious granddaughter and life in general.  I did come up with an interesting cake which I still plan to make.  It used a lemon-lime soda in the ingredients and that sounds like fun. The month does fly by.  I can't believe, it is time to post another Ina recipe but I am happy about it.  I always find a number of recipes, I want to make, and it happened again, this time.  There was a coffeecake and an orange cake which I knew my hubby would love and of course, there was chocolate for me.  I decided on the lemon because I had lemons in the house and I love the fragrance of the zest. Lemon Cake (adapted from I na Garten) Ingredients : 7 ounces oil 2  cups granulated sugar, 4 extra-large eggs, at room temperature 1/3 cup grated lemon zest (6 to 8 large lemons) 3 cups gluten-free flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoon kosher salt 1/2 cup freshly squeezed lemon juice  3/4 cup buttermilk, at room temperature 1 teaspoon pure vanilla extract Method: Preheat the oven to 350 degrees F. The story of my life.  Hubby is out of cake.  Run to kitchen.  Turn on stove.  Find a recipe.  Bake and hope for the best.  Watch results which means ......... **********One Very Happy Husband********** Lemon Tea Bread (adapted from America's Test Kitchen Family Baking Book ) Ingredients: 1 3/4 cups gluten-free flour 1/2 teaspoon baking powder 1/2 teaspoon salt 7/8 cup oil 1 1/4 cups sugar 2 teaspoons grated fresh lemon zest 3 eggs 1/4 cup almond milk 2 teaspoons fresh lemon juice 6 cherries, halved Method: Preheat oven to 350 F. Grease and flour an 8 1/2 by 4 1/2-inch loaf pan. Whisk the flour, baking powder, and salt together in a medium bowl. Put the lemon zest the sugar into the bowl of an electric mixer and rub the two together until the sugar is moist and fragrant. Lemon Chicken Pasta - Wednesday with Donna Hay

I usually cook for my Donna Hay group on Tuesdays so I can post it on Wednesdays. I fell behind, this week, but I am getting it out on Wednesdays. It is surprising that I am late in doing this since I look forward to cooking Donna recipes. Almost everything has turned out to be yummy and nothing has been difficult. A win-win situation. This week is no exception. Lemon Chicken Pasta is shredded chicken mixed with spaghetti, garlic, red pepper, shredded chicken breast, lemon juice, lemon zest, basil , salt, pepper, and Parmesan cheese . I added sliced onions and I had a little coconut milk in the refrigerator and could not help myself. I added it to the mix and it made it perfect. Lemon Salmon with Mango

It has become a good habit of ours to pick up mangoes from Costco, almost every time, we visit.  I know little about the fruit but there must be different varieties since our last batch, looked and tasted different.  It did have good flavor in common with the other varieties.   I can't understand how my younger daughter does not like mangoes but then, she doesn't like salmon, either.  She is smart enough to like chocolate. Mangoes means, plenty of dishes with mangoes. Fortunately, we both love mangoes.  I simply incorporate them in most of the dishes, I make after we get our bundle.  They add such a nice flavor to any dish.   Lemon Salmon Mango Platter Ingredients: 1 pound salmon fillets 1 lemon (squeeze out juice) 1 teaspoon Mediterranean seasoning 1 mango Method: Spray baking pan with cooking oil (olive) and heat pan. I am sorry, I have not been able to post, for the last three days.   Now that  the holiday is over, I hope to catch up and start posting daily and doing all the other fun activities like visiting your blogs and linking up.  I took this recipe from Chaya's Comfy Cook.  I remember, when I made this and how much we loved it.  I will have to make it again.  Right now, we are eating leftovers but I am sure, new food is on the horizon.
