Iftar 15 Ramadhan 1437H | 20.06.16

Dah separuh bulan...hmm...sgtlah cepat rasanya.

Seperti biasa, menu iftar for the Almaraz's:
Nasi putih
Almaraz Dendeng [versi mom ni, so sesapa nk resipinya, sila klik  >> dendeng]
Pajeri terung
Shrimp scampi
Taugeh tumis kunyit  >> mcm dah sendat menu (plus some leftovers) so terpaksa drop this one

- Agar2 santan & apam balik >> my darling brought back from office with some desserts so mom skipped making any

Hari ni pun menu nasi putih gak. We managed to prepare these plus some leftover a day before.

Iftar 7 Ramadhan 1437H | 12.06.16

Hari ke 7 yg penuh cabaran.
Balik dari shopping raya dh kelewatan, kurang prepare awal2 tu le sbbnya lmbat segala heheh....
Sudahnya, menu2 asai terpaksa di cantasssss :(

Our 7th iftar menu list:
Nasi putih
Yoghurt beef/mutton masala > ditukar kpd ayam
Sup ayam Hatyai > dah diganti pada hari sebelumnya
Chicken Masala
Daging masak kicap > hat yg switched dgn ayam hatyai pada hari sebelumnya
Tumis kacang buncis
Celur pucuk betik & ulam daun pokok gajus + Sambal

-Kuih bakar jagung & sago caramel
- Kuih kundas > ni je yg paling cepat boleh siap in less than 10mins!

chicken masala - using homemade masala spice

Chicken Masala

Ingredients:~
(A) Marinade
Half chicken - cut into medium size (I've used chicken breast with liver and gizzard)
1 tbsp ginger-garlic paste
1.5 tbsp chilli powder > just add a little..tu pun dah pedas sampai ada yg kene tukar nasi but said still yummmm!
2 tbsp meat curry powder
1 tsp turmeric powder
Salt
2 tbsp lime juice

(B) Mixed spices
1 cinnamon stick
3 cardamoms - slit open and save the seeds
1 star anise
2 cloves
Coriander seeds
Fennel seeds
Cumin seeds
Black peppercorn
*add your preferred spices > mom just add all the above

(C)
2 large onion - sliced
2 bay leaves
1 sprig curry leaves
2 green chilies - sliced
1 red chilli - sliced
1 tomato - sliced
Sufficient water
2 handsful coriander leaves - chopped
1 tbsp lime juice
3 tbsp ghee

Method :~
Marinade ingredients (A) for an hour.

Marinated in a large plastic bag

Dry roast spices (B) without oil and grind smooth. Set aside. We will use 1.5 tbsp of this.
Heat ghee in a wok. Stir fry onion, bay leaves, curry leaves and green chillies (I add together the red chillies) until fragrant. Add tomatoes and stir.
Now add in marinated chicken pieces. Mix well and cook with lid covered for 10 - 15 minutes. Check once awhile and stir.
Add little water and salt if needed. Add 1.5 tbsp of roasted & ground mixed spices. Mix thoroughly and add coriander leaves.
Lastly, pour 1 tbsp lime juice and mix evenly. Dish out and ready to be served.

Ghee Rice


Simple Ghee Rice

Ingredients :~
• 4 rice-cups Basmathi rice (washed and soaked in water for 30 minutes, then drain excessive water)
• 4 rice-cups water
• 1 rice-cup evaporated milk (mom changed to coconut milk)
• 1 tbsp salt
• 2-3 tbsp ghee
•1 tbsp margerine
• 2 tbsp garlic-ginger paste
• 5 shallots sliced
• 1 cinnamon stick
• 3 cardamom pods
• 1 star anise
• 1 stalk lemongrass (crushed)
• 2 green chillies (sliced)
• 1 handful mint leaves (chopped) (omitted)
• 1 handful coriander leaves (chopped)
• 2 bay leaves
• yellow food colouring / sprinkle some saffron on cooked rice OR both
• 2 tbsp cashew nuts (omitted)
• 2 tbsp almond nuts (toasted in ghee) (omitted)
• 2 tbsp sultana raisins (toasted in ghee)
*omitted sbb kids are not into nuts...

Method :~
1. Transfer washed and soaked Basmathi rice into rice cooker.
2. In a pan, heat ghee and margerine. Saute cinnamon stick, cardamom pods, star anise, sliced
shallots and green chillies until fragrant.
3. Add garlic-ginger paste and lemongrass. Add mint, coriander and bay leaves. Mix well and pour
the gravy into rice cooker and mix together.
4. Add water, evaporated milk and salt. Mix and allow to cook.
5. Once rice cooked, turn off the switch. Using a chopstick, make few holes in the rice. Add few
dashes of yellow colouring into each hole. Sprinkle saffron if you prefer and some toasted nuts and
raisins. Close the lid. (DO NOT mix the rice immediately!).

Here is the recipes, very simple yet tempting!

Beef/Mutton Varuval
source: Venisri Senthan (cau use Mutton but mom used Beef as the protein sbb tekak anak2 lebih kpd beef wpun mom sgt suka mutton/lamb)

Bhn A (perapan):
1kg daging
2 sdb ginger garlic paste [mom dah blend siap2 but not mixed the paste]
3 stalks lemongrass paste
3 sdb chilli powder
1 sdt turmeric powder
1/2 sdt garam masala
Garam secukupnya

Minyak secukupnya

Bhn B: 

3 bj bwg merah, hiris2
2 tangkai daun kari
7 bj cili kering, potong dua

Bhn C: 
1 sdt biji ketumbar 
1 btg cinnamon
5 biji pcs buah pelaga
2 ketul bunga lawang


Mom perap dlm large ziplock bag, like this kind a way of marinating
Cara:
  1. Marinade daging dgn bhn2 perapan utk 15mins. 
  2. No need oil, letak marinated beef dlm kuali, tutup sambil  masak hgga daging agak kering (skali skala kena kacau ye).
  3. Bila dh hmpir kering, baru letak minyak di tgh2 kuali. Kacau2.
  4. Tmbh semua bhn B & bahan C. Kacau hgga bwg2 masak (disarankn dlm 20-30min)
  5. Warna daging akn jadi kehitaman, perisakn dgn garam & gula (mom tmbh gula skit).Siap!

Iftar Day21: Daging gulai kawah lagi...

Since demang up sikit utk gulai kawah ni so mom pun masak lagi lah, terpaksa selitkan lagi dalam menu bulan puasa ni...hari ni memang menu berulang je, since ada yg request nk tu lah, nk ni lah.

Sup suhun + kentang + ayam
Ayam goreng kunyit
Tumis kailan
Apam coklat
Cekodok pisang

kuih2 cik mek tu lebihan dari hari sebelumnya, apam yg brown sikit tu, baki2 gak, dari surau  :)

Iftar Day12: Daging Masak Hitam

Alhamdulillah...syukur dengan rezeki Allah.

Our 12th iftar:
Gulai darat ayam  - kali ni mom buat agak pekat sikit tp kuah still banyak
Daging masak hitam ala  mamak - sangat2 yummm...next time nak masak kamben pulak ^_^
Puding karamel tanpa telur -  sila ke entri baru if nak resipi ni...





My fav..ni daging lembu, if kambing lagi umpphh... :)

Daging Gulai Kawah




Daging Gulai Kawah

Bhn:
400-500g daging + lemak2 & urat2 sikit (organ dalaman lembu mom tak masuk sbb mom sorang je makan, yang lain surrender)
Pes tumis gulai kawah (mom dapat dari saudara di Kelantan yang berniaga pes2 ni kat kedai2 makan)
3-4biji bawang kecil, mayang
Air asam jawa, secukupnya
Gula, manisan & garam, secukupnya
Santan, secukupnya

Cara:
1. Sediakan pot, masukkan daging. Bubuh sedikit air. Masakkan daging hgga air (plus air daging yang terbit later on tu) agak2 kering & daging mulai empuk.
2. Masukkan pes tumis gulai kawah. Gaul rata, diikuti dengan bawang yang dimayang tadi. Kacau lagi.
3. Barulah dimasukkan santan secukupnya. Masakkan hingga menggelegak ye. Kemudian barulah diperisakan dgn air asam jawa, gula dan manisan serta garam. Gulai siap bila daging dah betul2 empuk dan agak pekat sikit.

Dah masuk 5 Ramadhan.
Alhamdulillah si adik dua orang tu, Arish (9yo) and Khalish (7yo) masih tegak berpuasa.
Bila balik dari skool, macam ada senget2 sikit, low batery.
Tang lepas berbuka, especially kat surau, high batery sungguh!

Tonite, our iftar yang mom sediakan is quite simple but of course, Alhamdulillah.

Assalamu'alaikum,

Coretan kali ni pun tak leh panjang2, sangat simple juadah kami, setakat ini sahaja le yer :)

Iftar Day2: 30June2014

Alhamdulillah...syukur atas nikmatnya diberi rezeki makanan yang lazat & cukup untuk kami sekeluarga.
Memasak pun dalam masa yang sangat terhad tp definately, mom really had fun cooking this way :)
Ala2 stress test dlm master chef la plak :P

Menu simple je hari ni...main dish is sup tulang..yummm....

Ikan goreng kunyit: ikan kembung & bawal
Sayur campur
Kuih pulut sekaya --- tragis sikit sbb manisan mom dah ketandusan stok rupanya :( tp...buat jugek ler, that's why nipis je atasnye tu...

Daging Masak Kari Pakistan



As Salam...Good Day..

Lunch hari ni agak lewat sikit...kes makan brunch roti jala dengan kari daging, garlic bread + waffle.
Walau pun lewat...ada hikmahnya kan.. Hari ni menu daging (since ada balance sikit lagi dalam fridge tu), kena pulak my dearest sis Quinnie tempek lak kari dagingnya kt FB...pe lagi....
Thanks Q! Memang umpph...Mom mmg suka masakan kari pure Pakistan sebab depa tak guna santan dalam kari.

Daging Masak Kari Pakistan

(resipi ni mom copy paste je Q...)

Bahan-bahan:
1 ekor ayam - potong 16 bahagian - Mom guna 300-400g daging aje
4 biji bawang besar - cincang       - 1bj 
4 biji tomato merah - cincang      - 2bj tomato saiz sederhana
1 sudu makan halia kisar              - 1sdt 
1 sudu makan bawang putih kisar  - 1sdt 
1 sudu teh serbuk kunyit             - 1sdt 
2 sudu makan serbuk cili              - 1sdt 
1 sudu teh serbuk ketumbar        -  1sdt   
2 cawan air                               - 1 cwn  
garam                                       - garam & gula secukup rasa
1/2 cawan minyak                       - 3-4sdb
garam masala - jika suka (tak bubuh pun tidak apa - Amie tidak bubuh) - skip
hirisan cili padi dan daun ketumbar untuk hiasan                              - skip

Cara:
1. Panaskan minyak dan tumis bawang besar cincang hingga kekuningan.
2. Masukkan tomato cincang dan teruskan tumisan hingga sebati.
3. Tambahkan halia dan bawang putih kisar, serbuk cili serta serbuk kunyit. - plus serbuk ketumbar
4. Kacau hingga sebati dan masukkan air. Biarkan bahan tumisan masak sehingga bawang dan tomato hancur. (Menurut Kak Maria, menumis bahan ini boleh memakan masa selama 1 jam!) -> Mom tak masukkan air dulu tapi masukkan daging, kacau rata dan biar ia masak bersama2 tumisan, guna api sederhana.
5. Masukkan ayam dan gaul rata. -- Skip this part -- 
6. Tidak perlu tambah air kerana daging ayam akan mengeluarkan air. Perasakan dengan garam (Amie tambah sedikit serbuk pati ayam). Mom perisakan dengan garam & gula & tambah air selepas air daging agak2 nak kering.
7. Kacau sebati dan masak sehingga kuah kering. (sebaiknya jangan sampai kering).
8. Hidangkan bersama taburan cili padi hiris dan daun ketumbar. -- Skip this part sbb mom tak makan cili padi & tak de daun ketumbar --

Daging Rusa Masak Lombok



Masih ada lagi daging rusa :). This recipe is from housewife of myresipi.com. First time trying this one which I honestly think only me can eat it. Anyway, maybe masa makan tu ada lagi dish lain yang lebih tempting to the rests in the house that's why they didn't really bother touching this one. Anyway, thanks to housewife for sharing the recipe.

Jom....ke dapur!


Daging Lombok (Daging Rusa)

Bhn2:
Daging 1/2 kilo
Suhun 3 Ikat (direndam)
Kicap manis 1/2 Cawan
Garam/Ajinomoto secukup rasa (we don't eat ajinomoto so I replace with sugar)
Minyak untuk menumis

Bahan dikisar
15 Btg cili padi (mom tukar dgn cili merah, I don't eat cili padi)
1 Biji bawang besar
3-4 Uls bawang putih
1cm Halia

Cara-cara
Panaskan minyak didalam kuali dan tumiskan bahan-bahan yang telah dikisar.
Masukkan 2 cubit garam dahulu dan masukkan daging.
Apabila daging empok, masukkan suhun yang telah direndam.Agak-agak mendidih tuang kan kicap.
Akhir sekali jangan lupa garam dan ajinomoto gula secukup rasa

Iftar 7 Ramadhan 1434H

Seminggu berpuasa sudah...! Kali ni mom masak daging rusa lagi :)
Dua jenis masakan sbb kononnya nk pelbagaikan versi resipi daging rusa heheh...plus nk ada yg berkuah. Daging masak kicap xsmpt bergambar...

Daging rusa masak lombok (just masak sikit for myself because the rest tak mkn)
Daging rusa masak kicap (everyone's fav except me!)
