Pumpkin Cheesecake Recipe
My girls have been asking me for this recipe for quite some time now ~ so I thought I'd post this and share it with everyone! I've made this a few times for 'Cardmakers" and it's been a real hit. Such an easy recipe and absolutely delicious, so give it a try, I'm sure it will be a new favourite in your collection of Cheesecake recipes! Enjoy! Ingredients 1-1/2 cups crushed gingersnap cookies (about 30 cookies) 1/2 cup finely chopped pecans 1/4 cup butter, melted 2 packages (8 ounces each ) cream cheese, softened 3/4 cup sugar, divided 1 teaspoon vanilla extract 3 eggs, lightly beaten 1 cup canned pumpkin 1 teaspoon ground cinnamon 3/4 teaspoon ground nutmeg GARNISH: Whipped topping, optional Additional gingersnap cookies, cut into wedges, optional Directions Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square).
