Seafood Spinach Soup

Spinach Soup

Do U have days whereby U simply loose your appetite and your tongue tastes bland or acidic?
Such days come around once in a while…whenever this happen, my tummy goes on strike too.
Sad to say, today is that kind of day for me…..I was not feeling up to scratch the whole morning. I need something to lift my spirits.

I have no mood to do anything not to mention eat any nor can I stomach another take-away. Usually with such conditions, my body just yearns for anything mish mashed. It can be watery porridge, congee or simply soup.

I have a thing for soups….any kind from creamy, clear to double boil Chinese soups.

I take pride in making my soup, to get good quality soups; I use the best ingredients & cook/simmer them with the right amount of time to achieve perfection.

Anyway, I have declared today a liquid diet day to my entire hillbilly troupe.

I just bubbled a huge pot of rich seafood broth with lots of spinach. This is lunch & dinner for me…as for my troupers, I will throw in each a bowl of hot fluffy rice.

With the meals of the day taken care off…now I have gained myself more time to cohere to the PC and later TV watching. Taking about ways to lift my spirits….Yippy!!! I am feeling much better already.

Creamy Chicken Vegetable Soup

Creamy Chix Vege Soup

With Salmon as the main course, I need a soup & some carbo to compliment the meal.

But rice & noodles are too boring…mash is kinda too heavy too.

Thus, I decided to make a soup that consisted of potato (carbo)…
This is what I call best of both worlds….U get carbo in a soup!

Creamy Chicken & Vege Soup
(Serves 2)

What U need:

  • 200g Chicken breast – cubed and marinated in salt for at least 2 hrs
  • 200g Bacon - cut into tiny bits
  • 1 large Onion – cut into quarters
  • 1 large Carrot – cut into small pieces
  • 2 large Potato – cut into quarters
  • 1 large floret Broccoli – cut into smaller florets
  • 1tbsp Butter
  • 2 cups Chicken Broth

White Sauce:

  • 3tbsp Butter
  • 4tbsp Flour
  • 1½ cup Fresh milk

How to make white sauce:

  1. Heat another pan with butter.
  2. Add the flour and stir till both become a smooth paste.
  3. Add milk next & bring to boil.

Method:
  1. Heat pot with butter.
  2. Fry onion till transparent and soft.
  3. Add bacon & fry for few mins.
  4. Add the chicken next and fry till ½ cooked.
  5. Add in the carrots & potato and stir for a few mins.
  6. Add in the chicken broth & bring to boil, let it simmer for 20 mins.
  7. Mix the white sauce to the pot of soup & bring to boil.
  8. Add the broccoli and simmer for another 5 mins.
  9. Add salt & pepper to taste.
  10. Serve hot.

Herbal Chicken Soup (药 材 鸡 汤)

What U need:

  • 1 Whole chicken
  • 8 slices Dang Gui (当归)
  • 4 pcs Huai Shan (淮山)
  • 4 pcs Chuan Gong (川弓)
  • 4 pcs Bei Qi (北芪)
  • 4 pcs Dang Shen (当参)
  • 8 slices Yu Zhu (玉竹)
  • 15 Ji Zhi (杞子)
  • 10pcs Red Dates (红枣)

Method:

  1. Wash, trim and remove all skin and fats from the chicken.
  2. Cut the chicken into ½, blanch in boiling water then rinse and set aside.
  3. Rinse all the dried herbs & soak for 20mins in cold water.
  4. Transfer all to a slow cooker, add hot water and simmer for about 3-4 hrs.
  5. Season with salt just before serving.
